I think I'm gonna start recording recipes I make off the top of my head here on the blog, I cook a lot and sometimes I make something off the cuff. Today's recipe was one of those "what I had" fridge cleaners combined with a can of Campbell's Cream of Mushroom Soup, which, surprisingly comes out pretty tasty. As prepared, it makes four 375g (~13oz) servings. Each serving is about 350 calories.
In a medium saucepan, over medium heat, combine the Oil, Bell pepper, Green onions, and mushrooms. Saute, stirring frequently, until the mushrooms have softened. (about 5 minutes)
If using fresh garlic, add it here.
Add in rice. Stir frequently for a few minutes until rice is slightly brown.
Add in water, garlic powder (if using), and the entire can of cream of mushroom soup, bring to a boil, reduce heat to low, and cover, stirring occasionally to avoid sticking and burning to the bottom, for about 20 minutes or until rice is cooked.
Remove from heat, add in the peas and carrots and stir. Add salt and pepper to taste at this point, and serve.
